Parmesan Chicken

Grated Parmesan cheese makes this dish a snap.

1/2 cup (about 2 oz.) grated Parmesan cheese
1/4 cup flour
1 teaspoon paprika
1/2 teaspoon salt
Dash of pepper
2-1/2 to 3 pound broiler-fryer, cut up
1 egg, slightly beaten
1 tablespoon milk
1/4 cup butter or margarine, melted

Oven: 350 degrees

Combine cheese, flour, and seasonings. Combine egg and milk. Dip chicken pieces in egg mixture, then coat with cheese mixture. Place meat in a 12x8-inch baking dish and pour melted butter over pieces. Bake one hour. Sprinkle with additional grated Parmesan. Serves four.
