Quick Oat-Bran Bread
Fast and easy to make; no rising required.
2 cups all-purpose flour
1/3 cup sugar
2 teaspoons salt
1 teaspoon baking soda
1 1/2 cups regular or quick oats (not instant)
1 cup whole-bran cereal
1/2 cup raisins
2 eggs
1 1/3 cups buttermilk
1/2 cup molasses
Oven: 350 degrees
Mix all ingredients together thoroughly and place in a greased 9x5x3-inch loaf pan. Bake about an hour, or until well-browned and done. Turn out on a rack. Can be served warm or cold. Makes one loaf.
