Kentucky Pecan Pie
Makes a great pecan pie, and it's fast, too.
1 9-inch unbaked pie shell
1 cup white corn syrup
1 cup dark brown sugar
1/3 teaspoon salt
1/3 cup melted butter
1 teaspoon vanilla
3 whole eggs, slightly beaten
1 heaping cup whole peacans, shelled
Whipped cream (optional)
Oven: 350 degrees
Combine sugar, syrup, salt, butter, and vanilla, mixing well. Add slightly beaten eggs. Pour into pie shell. Sprinkle pecans over all. Bake for about 45 minutes. Cool before serving. May be served with whipped cream, but this pie really doesn't need any topping.
