Quick Honey Bread
A fast and delicious bread, sweetened only with honey and apple juice. Great with afternoon tea or for breakfast.
2 tablespoons soft butter
1/2 cup honey
1 egg
2 1/2 cups unsifted flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ginger
3/4 cup apple juice
1/2 cup chopped walnuts or pecans (optional)
Oven: 325
In a bowl, cream butter with honey until smooth. Beat in egg. Sift flour with baking powder and soda, salt, and ginger. Add to creamed butter mixture alternately with apple juice, stirring just until blended. Avoid over mixing. Fold in nuts (if used).Put batter in a greased 9x5x3 loaf pan, lined with greased wax paper. Bake for one hour or until cake tests done. Turn onto rack to cool, removing wax paper.
